Recipe: Hearty Post-Workout Oatmeal Omelet

The basic premise of this recipe came from my pal Jessie from the Spoon Licker's blog. I'm not sure where she got it, but she's pretty much a genius when it comes to healthy cooking.

Just a little disclaimer: I hate eggs. I always have. I really, truly, want to like eggs but I physically can't because they are gross. The same goes for hotdogs. No matter how I try to dress them, they are still disgusting (yes, people, EVEN J-DAWGS). Although this recipe has eggs, I can't taste them which means it's awesome. 

What you'll need:
3-5 free-range chicken egg whites
Oatmeal (I use the Quaker variety)
Non-fat cooking spray
WHATEVER ELSE YOU WANT TO USE
(Like fruits, veggies, meat, and cheese!)

The best thing about this recipe is how much variation you can add to it. Use the fruits or veggies you like and leave out all the nasty stuff. I cook food like it's an artistic process, always changing and adapting, rather than an exact math. (This, dear readers, is why I'm an atrocious baker.)

This particular morning after I got home from the gym, I used about a half of an onion lazily chopped and sauteed in veggie stock until caramelizedy.
3 farm fresh egg whites from my parent's free-range chickens.  
 (Make sure to let one of the eggs roll off the counter while you aren't looking.)
 About 1/2 to 3/4 cup or so of quaker oats.
 Add some low sodium black beans (or anything else you want) and mix it altogether. The consistency should be pretty goopy and not dry and chunky. If it is, add another egg white. Pour it into a small pre-sprayed pan and cover. Let it cook until the edges are firm enough to flip. Cook it much like you would a pancake, except covered.
 When cooked all the way through, splatter it with anything delicious such as chipotle Tabasco (aka, heaven) sauce. ENJOY!
Depending on how much stuff you put in it, it will probably be big enough for two servings. I saved one of my halves and ate it for lunch with some melted low-fat smoked mozzerella over the top. It's easy, filling, customizable, and healthy! What could be better?
